Fat Thursday, colloquially also known as Donut Day, is one of the most anticipated days in the calendar for many Poles. It is primarily a tradition that dates back to the Middle Ages, being a feast of abundance and joy preceding the period of Lent. On this day, according to custom, sweet pastries are consumed, and donuts are the clear favorites. These fluffy, sweet delicacies not only pamper the palate but are also a symbol of happiness and prosperity.

To prepare donuts yourself, you only need basic baking ingredients such as flour, yeast (fresh or dried), milk, sugar, eggs, butter, and a pinch of salt, as well as a bowl, a large pot or deep frying pan, slotted spoon and kitchen strainer for powdered sugar. Homemade donut preparation has its own unique charm: from the ability to customize the recipe to your own taste preferences, to the joy and satisfaction of self-preparation. Frying donuts at home is also a wonderful opportunity to spend time with family, introducing younger generations to the beautiful tradition of Fat Thursday.

The key to fluffy donuts lies in a few simple secrets. Firstly, the temperature of the ingredients is important – all of them should be at room temperature before preparation - especially the eggs. The second secret is thorough kneading of the dough, which allows the gluten to develop and achieve the right texture. Last but not least is peace and patience during the dough's resting period – do not rush, let it rise beautifully.
From 0.5 kg of flour, you can get up to about 20 donuts, depending on their size. If you form smaller donuts, this number may be higher, while with larger ones, this number may be lower. The size of the donuts depends on preference – smaller ones can be about 5-6 cm in diameter after frying, while larger ones can be 7-8 cm or more. It is important to remember that donuts increase in size during frying, so it is worth forming them slightly smaller than the planned final size.
To prepare donut dough from 0.5 kg of flour, 4 egg yolks are usually used. This amount of eggs provides the dough with the right structure and moisture, and also helps in achieving a light and fluffy interior of the donuts after frying. Eggs are an important ingredient in many donut recipes because they add richness of flavor, stickiness to the dough, and support the rising process.
Donuts with a characteristic light ring, also called a "collar", are a classic indicator of well-fried donuts. To achieve this impressive ring, they should be deep-fried in oil over moderate heat, so that the upper part of the donut, which protrudes above the oil, does not fry and forms a light ring. The consistency of the donut dough itself is also very important; it should be soft and slightly sticky, but at the same time elastic. Do not add too much flour, as dough that is too stiff can make it difficult for the ring to form.
